Stuffed mushrooms are a great appetizer that can also be a great main meal if you add a side of parboiled rice or mashed potatoes. The meal is full of flavor, absolutely delicious, and, what is also important, healthy.
Large mushrooms – 10 pieces
Cooked shredded chicken breast – 1 piece
Cheese – 4 oz
Garlic – 1 clove
Sour cream or Greek yogurt – 2 oz
Parsley – to taste
Salt, pepper – to taste
Once you have all ingredients ready, you can start cooking the appetizer with the help of the Cuisinart electric griddle.
First of all, prepare your mushrooms. Wash them thoroughly and take out the stems. Wipe off the mushrooms to make sure that there is no dirt left on their surface. Chop the stems, add the shredded chicken, salt, pepper, minced garlic, add sour cream or greek yogurt to the mixture.
Once the mixture is ready, set it aside. Meanwhile, start heating the Cuisinart electric griddle to high heat. While the griddle is getting ready, stuff the mushrooms.
Use the spoon to put the chicken mixture in the center of the mushrooms. Make sure that the stuffing is spread equally. Once all mushrooms are stuffed, add some shredded cheese on top of each.
After the mushrooms are fully prepared, put them on the hot surface of the Cuisinart electric griddle. The meal should be ready in 10-15 minutes, depending on the size of your mushrooms.
Please, note that the dish can also be made in a vegan version. For this, you will have to substitute the chicken with some tofu and use vegan yogurt instead. If you like it, you can also add some chopped vegetables, such as carrots, zucchini, and onions. They will add more flavor to your vegan meal.
